Daigaku Imo Narikoma
Born in a long-established sweet potato wholesaler, the owner opened his own shop “Narikoma” in Nezu with his thorough knowledge of sweet potatoes, having been taken by his father to all the production areas in Japan since he was a child.
To make their Daigakuimo (Japanese candied sweet potatoes), the owner only uses sweet potatoes that he has purchased through his longtime relationship with reliable suppliers. The skin is peeled by hand at the store, and the sweet potatoes are prepared according to the season and each potatoes’ characteristic.
The outside is crispy and the inside is moist while still retaining a crunchy texture, Narikoma's large deep-fried sweet potatoes maintain the perfect balance of texture and flavor, and are topped with golden syrup and accented with black sesame seeds. Their Daigakuimo are made using several different types of potatoes with different amounts of syrup depending on the time of year, always using the best recipe at the time.
